Chicken Kofta Rice


I have always had this recipe but I never tried it out. The other day, Mol villichu paranchu, she made it for some friends and nalla ugran aarannu. I tried it the very next day and the results were quite appetising.

Ingredients:
Minced chicken - 1/2 kg
Onions - 2
Green chillies - 4
Grated ginger - 2 tsp
Vegetable oil - 4 tbsp
Rice - 2 cups
Tomatoes - 4
Cinnamon - 1 big stick
Cardamom - 4
Cloves - 6
Turmeric powder - 1/4 tsp
Red chilli powder - 1 tsp
Soy sauce - 1 tsp
Chopped coriander leaves - 1 cup
Chopped mint leaves - 1 tbsp (optional)
Warm Water - 4 cups
Salt to taste

Method:
Chop one onion and all the green chillies finely.
Mix chicken mince, 1 tsp grated ginger, chopped onions, green chillies, soy sauce, half of the coriander leaves and salt in a bowl.
Make small kofta balls with wet hands and refrigerate for 1/2 hour.

Wash, soak and drain rice and keep aside.
Slice the other onion lenghtwise and chop all the tomatoes finely.
Heat oil. Add the onions, remaining grated ginger and saute well.
Add whole spices, turmeric powder, red chilli powder and saute them on a low fire.
Add tomatoes and saute well.
Add rice and mix well. Add salt to taste.
Add the warm water and remaining coriander leaves. Let this come to a complete boil.
Add chicken koftas, mint leaves and let this boil for 10 minutes.
Reduce to a medium heat and cook till rice and chicken are well done.

Serve with cool onion-capsicum raita and lemon pickle.
